Expanding the perennially popular Hector's Deli, the South Melbourne outpost is designed as a working stage for the energy of the team, the boldness of the branding, and a general devotion to sandwich worship. The architecture pares back to its working essentials, letting the colour, the people and the product carry the room. The result is a deli that feels purposeful and unfussy, true to the spirit of the original and grounded in its corner.
